DAWN'S FRIED RICE | |
FAMILY SIZED PORTION: 2 cups uncooked white rice 4 cups liquid (2 cups chicken broth + 2 cups water 2 cups chopped cooked meat (i.e. chicken, pork, beef etc.) 1-2 cups chopped onion 1-2 cups chopped fresh mushrooms your choice vegetables (optional) Note: Any other vegetables (i.e. sugar snap peas) should be added the last 5 to 10 minutes to just steam them. Take 2-3 tbsp butter and melt in frying pan or electric skillet. Add raw rice and mix till rice is coated, stirring frequently. Brown rice till a nice golden brown color (watch closely as this browning happens quickly). Add broth, mushrooms and onion with the meat stirring to mix well. In electric fry pan cover and cook at 350°F for about 45 minutes, stirring frequently to keep from sticking. If using a regular fry pan keep heat at a medium setting with a snug fitting lid, again stirring often to minimize sticking. The rice should take about 30 to 45 minutes depending on your stove-top temperature. Combinations are endless. A nice rice side dish that does not clump when cold and reheats well.
