1/8-1/4 tsp. salt
6 eggs
2 tsp. vanilla
5 c. whole milk
2 c. sugar
4 oz. unsweetened chocolate or equiv. of 1/4 c. butter & 3/4 c. cocoa

Scald whole milk. Melt chocolate, add to hot milk and stir until well mixed. Combine sugar, eggs and salt; beat until light. Pour milk onto sugar mixture blending with whisk. Using 1/2 of mixture at a time (or if you have a 6 quart double boiler you may use all), heat over double boiler until mixture coats spoon. Cool, stir in vanilla. Pour into ice cream maker and follow ice cream maker directions. This is absolutely wonderful ice cream!

I loved the ice creams taste and there were even little chunks of chocolate which kind of mocked mini chocolate chips! I was looking for a chocolate ice cream recipe with only unsweetened chocolate so it would only be sweetened with stevia and this is the only one! well i accidentally got 2% milk instead of whole but the taste was great and on the lines of a frostie from wendys. Next time though I will remember the whole milk thanks though for posting this recipe!!

I made this recipe and changed it to semi sweet chocolate since I didn't have unsweetened and it was amazing!!! All of the children loved helping make it, and it was so easy to prepare! It was smooth and creamy! Kudos for coming up with this recipe!!!
