PORTUGUESE POTATOES | |
8 to 10 med. potatoes, cubed and boiled in skins 1 lb. Velveeta cheese 1/2 c. finely chopped onion 1 sm. jar chopped pimientos 1 1/2 stick butter, melted 2 tbsp. parsley 1 scant tsp. garlic chips 4 slices bread toasted and cubed Cook potatoes in jackets until done. Put in a large casserole dish. Cube cheese and sprinkle over potatoes. Sprinkle onions, chopped pimientos, parsley and garlic over potatoes and cheese. Cover with the cubed bread pieces, then pour melted butter over casserole. Bake at 350 degrees for 40 minutes. Fannie M. Sellers |
