CLOVE SPICED COFFEE CAKE 
This is a recipe I came up with myself after years of trying to develop my own recipes from scratch. This makes for a more dense cake, but comes out delish!

1/4 cup (1/2 stick) butter
2 cups white sugar
2 eggs
2 cups all-purpose flour
1 heaping tsp. baking powder
1 1/2 cups milk
1 cup cold coffee
1/4 to 1/2 tsp. ground cloves (adjust to your preference)
2 tsp. ground cinnamon (or pumpkin pie spice)
1 tsp. vanilla extract
1/4 tsp. almond extract

Note: You can also add in 4 oz. of Neufchatel cheese and whip right into the batter for a nice addition to this coffee cake.

Preheat oven to 375°F.

Combine butter, sugar, eggs and Neufchatel cheese (if using) together in a large mixing bowl. Add in flour, baking powder, milk and coffee. Beat or whisk well - if batter is still too thick, you will need to add in extra milk until it becomes more batter like. Add in cloves, cinnamon, vanilla and almond extracts. Stir everything together well.

Bake at 375°F for about 40 minutes until fork comes out clean. Time it takes to bake through will depend on your oven.

ICING:

1 cup confectioners' sugar
1/4 cup milk
few drops almond extract

Let cake cool and ice it if you desire with a basic icing of confectioners' sugar, milk, and a few drops of almond extract - boil icing over medium heat until well melted, take off heat and let cool before icing cake.
