COFFEE SPICE CAKE 
2 1/4 cups all-purpose flour
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. nutmeg
1 cup shortening or butter
2 cups sugar
2 eggs
1 1/2 sq. unsweetened chocolate, melted or 4 1/2 tbsp. cocoa
1 cup unseasoned mashed potatoes
1 cup cold coffee
1 tsp. vanilla
1 cup chopped walnuts

Sift dry ingredients; set aside. Cream shortening with sugar. Add eggs and beat well. Add chocolate or cocoa and potatoes. Blend well and add dry ingredients alternately with coffee and vanilla, beating until smooth after each addition. Add 1 cup chopped walnuts. Blend well.

Grease 2 (9-inch) layer pans or 1 (9 x 13-inch) pan. Bake at 350°F for 30 minutes. Frost with buttercream frosting.
