SPINACH AND TOMATO BAKE 
4 med. tomatoes
1 (10 oz.) pkg. frozen, chopped spinach, thawed and well drained
1/2 c. herb stuffing mix
1 tbsp. chopped onion
1 egg, beaten
1/4 c. butter, melted
1/4 c. Parmesan cheese

Slice each tomato into 2 inch thick slices. Place in a buttered baking dish in a single layer. Place remaining ingredients in a bowl and mix well. Make mounds of the spinach mixture on each tomato slice. Bake 15 minutes in a 350 degree oven.
