SPINACH BAKED TOMATOES 
6-8 thick slices of large tomatoes or tomato halves, peeled
Garlic salt and seasoned pepper
1/2 c. finely chopped onion
3 tbsp. melted butter
1 (10 oz.) pkg. frozen chopped spinach
1/3 c. crushed bread stuffing mix
1 egg, lightly beaten
Salt and pepper to taste
2 tbsp. grated Parmesan cheese

Arrange the tomato slices on a greased shallow baking pan. Sprinkle lightly all over with the garlic salt and seasoned pepper. In a frying pan, saute onion in the butter for 5 minutes. Add the spinach; heat and break apart as it cooks until spinach is tender and the water is almost evaporated.

Remove from heat and stir in the stuffing mix and egg. Season with salt and pepper to taste. Mound part of the spinach mixture on each tomato slice, using 2 spoon or an ice cream scoop. Cover and refrigerate if desired. Just before serving, sprinkle with cheese and bake, uncovered, at 350 degrees for 15 minutes or until heated through. Makes 4-8 servings.
