BASE: 1 c. flour 2 tbsp. confectioners' sugar 1/2 c. butter TOPPING: 2 eggs 1 c. brown sugar 1/4 c. flour 1/8 tsp. salt 1 tsp. baking powder 1 tsp. vanilla 1 c. chopped walnuts 1 c. coconut Measure flour, add confectioners' sugar, stir to blend. Blend in butter with fingers, or blender. Pat firmly into greased 8-inch square pan. Bake in slow 300 degree oven for 20 minutes. TOPPING: Beat eggs and sugar. Add flour, salt, and baking powder. Stir to blend. Add flavoring, nuts, and coconut. Spread over base. Bake in slow 300 degree oven for 30-35 minutes. The topping is very soft when removed from oven, but becomes firm as it cools. Do not try to cut or remove from pan until cold. Cut in squares or bars. |
