SHRIMP AND RICE 
2 lg. onions, chopped
1/4 c. parsley, chopped
1 tsp. salt
Pepper
1 to 2 tbsp. olive oil
1 lb. raw shrimp, cleaned
1 c. tomato sauce
1 1/2 c. water
1 bay leaf
1 c. long grain rice

In saucepan, saute onions and seasonings in olive oil. Add shrimp and cook together until shrimp is pink. Add tomato sauce, water, bay leaf, and rice. Cover and simmer until rice is tender and liquid is absorbed. Makes 4 servings.
