ALL VEGETABLE CHILI | |
2 tbsp. vegetable oil 2 med. stalks celery, chopped 1 med. onion, chopped 1 med. green pepper, chopped 1 lg. carrot, chopped 1 sm. zucchini, chopped 1 can red kidney beans 1 (4 oz.) can green chilies, chopped 1 (28 oz.) can tomatoes 1/2 tsp. oregano 1/2 tsp. salt (optional) 1 (4 oz.) pkg. shredded cheese (optional) 1 can pinto beans In a large Dutch oven, heat oil and saute onions, celery and green pepper. Add remaining ingredients and bring to a boil. Cook 15 minutes. |
