STUFFED MEATLOAF RINGS 
1 1/2 lbs. ground beef
1 egg, slightly beaten
1 c. bread crumbs or crackers
1 (2 1/2 oz.) jar sliced mushrooms, drained
2/3 c. milk
1 sm. onion, chopped
1 tsp. salt
1/4 tsp. pepper
1/4 c. ketchup

Mix above ingredients and divide in half. Put in ring dish and top with 1 (10 ounce) package of chopped broccoli, 1 can mushrooms, and 1 cup Cheddar cheese. Leaving a border to pinch the top layer of meat to the bottom layer. Spread with ketchup, if desired. Microwave for 20-24 minutes or longer, depending on wattage of microwave. Let stand for 5 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
