STUFFED MEATLOAF RING | |
1 1/2 lb. ground beef 1 egg, slightly beaten 1 c. bread crumbs 3/4 c. milk 1 sm. onion, chopped 1 (12 1/2 oz.) jar sliced mushrooms 1 tbsp. Worcestershire sauce 1 tsp. salt 1/4 tsp. pepper 1/4 c. catsup 1 pkg. chopped frozen broccoli 1 c. cheddar cheese Mix all ingredients together except the mushrooms, catsup, broccoli, and cheese. Pat 1/2 of the mixture into the bottom of a microwave baking ring. Top with a layer of broccoli, then mushrooms and then the cheese, leaving a 1/2 inch border around the sides. Top with remaining meat mixture and catsup. Cover with wax paper and microwave at medium high for 22-24 minutes. Be sure to check it frequently to make sure wax paper is in place and to see if liquid needs to be drained off. |
