RED VELVET CAKE AND ICING 
1 tbsp. cocoa
2 1/2 c. self-rising flour
1 tsp. baking soda (almost)
1 c. oil
1 tsp. vinegar
1 tsp. vanilla
1 1/2 c. sugar
1/2 tsp. salt
2 eggs
1 c. buttermilk
1 oz. red food color

ICING:

8 oz. pkg. cream cheese
1 box powdered sugar
1 stick butter

Combine sugar, cocoa, flour, salt, and soda. Blend in the oil, buttermilk, vanilla, vinegar, and eggs. Beat until well mixed, then add the food color and mix. Bake at 350 degrees for about 30 minutes. Cool cake before you put Icing on.

Icing: Let cheese and butter soften at room temperature. Then beat until smooth, gradually adding the sugar.
