RED VELVET LAYER CAKE 
3/4 c. butter
2 1/4 c. sugar
5 egg yolks
3 1/4 c. flour
1 tsp. salt
1 1/2 tsp. baking soda
1 1/2 tsp. vinegar
4 1/2 tbsp. instant cocoa, sifted
3 oz. red food coloring
1 1/2 c. buttermilk

Cream butter and sugar. Add egg yolks one at a time. Make paste of food coloring and cocoa. Add to cream mixture. Mix salt and vanilla with buttermilk, add alternating with flour. Fold in soda and vinegar last. Bake at 350 degrees for 30 minutes. Makes three 9 inch layers. Use Fluffy White Frosting.
