COTTAGE CHEESE-APPLESAUCE
WAFFLES
 
2 c. flour
2 tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt
1 c. milk
2 eggs, well beaten
1/2 c. oil or melted oil
3/4 c. applesauce
3/4 c. cottage cheese
1 tsp. cinnamon

Add liquid ingredients to dry ingredients (I fold cottage cheese in last). Stir together until smooth, before cottage cheese is added. I put 1 cup batter in waffle iron for about 5 minutes. Maybe waffle iron timing will vary. I also cool them completely and freeze them. They freeze well.
