CHICKEN MANDARIN SALAD 
2 to 3 c. chicken, cooked and cut into strips
2 lb. shredded lettuce
5 tbsp. diced fresh red peppers
10 strips bacon, cooked and crumbled
2 c. sliced water chestnuts
10 oz. frozen pea pods
1/2 c. toasted sliced almonds
Mandarin orange sections
1/2 c. green onion
1 lb. cooked wonton skins, cut into 1/2 inch strips

Combine lettuce, red peppers, pea pods, chestnuts, and green onions. Add chicken, bacon, and wontons. Toss lightly. Add Sesame Dressing (recipe below). Garnish with toasted almonds. Sprinkle with sesame seeds. Arrange mandarin oranges around edges.

SESAME DRESSING:

1 1/2 c. sugar
2 tsp. salt
1/2 c. chopped onion
3 tbsp. toasted sesame seeds
2 tsp. dry mustard
2/3 c. vinegar
2 c. salad oil
2 tsp. soy sauce

In food processor, mix sugar, mustard, salt, vinegar, and soy sauce. Add onion and blend. Add oil until thick. Add sesame seeds. Store in refrigerator.
