IRISH SODA BREAD II | |
3 c. flour 2/3 c. sugar 1 tbsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 1/2 c. seedless raisins 2 eggs, beaten 1 3/4 c. sour milk or buttermilk 2 tbsp. butter, melted In one bowl, sift all dry ingredients. Stir in raisins to oat. In another bowl, combine eggs, milk and butter. Pour liquid mixture into dry mixture and blend (stirring by hand). Pour into greased 9 x 5 inch loaf pan. Bake at 350 degrees for 1 hour. Remove from pan immediately (to prevent from sticking). Cool completely before cutting (to prevent crumbling). |
