AMY'S MEATLOAF 
3 lbs. ground beef
2 eggs
1 (8 oz.) can tomato sauce
2 tbsp. sour cream
1/2 tsp. salt
Dash of garlic powder
1/4 c. dried onion flakes
2 tsp. prepared mustard
1 1/2 c. bread crumbs
Velveeta cheese to taste
Mushrooms, sauteed several minutes in butter

In a large bowl, combine the beef with the eggs, tomato sauce, sour cream, salt, garlic, onion, mustard, and bread crumbs. Form into a large loaf; make a deep indentation down center of loaf and insert Velveeta cheese to taste. Remold meat to enclose cheese and place loaf in baking pan. Top with sauteed mushrooms and bake at 350 degrees for 1 hour. Serves 8.
