MUSHROOM CRUST QUICHE | |
3/4 lb. mushrooms, chopped coarse 5 tbsp. butter 1/2 c. crushed saltine crackers 3/4 c. chopped green onions 2 c. shredded Jack or Swiss cheese 1 c. cottage cheese 3 eggs 1/4 tsp. ground red pepper (cayenne) 1/4 tsp. paprika In frying pan over medium heat, saute mushrooms in 3 tablespoons butter until tender. Stir in crackers. Press evenly over bottom and sides of 9 inch pie pan. Saute onions in 2 tablespoons butter until tender. Spread onions over crust. Sprinkle cheese over onions. In blender, whirl cottage cheese, eggs and cayenne pepper until smooth. Pour into crust and sprinkle with paprika. Bake at 350 degrees until knife comes out clean (about 20-25 minutes). Let stand for 10 minutes. You can add bacon, vegetables, shrimp, crab or other items too! |
