OLY-BOLEN (DUTCH DOUGHNUTS0 
1/2 c. milk
2 tsp. brown sugar
1 pkg. active dry yeast
1 egg
1 1/2 c. all purpose flour
1/2 tsp. cinnamon
1 tsp. salt
1/4 c. warm water (105 to 115 degrees)
3/4 c. golden raisins
1/4 c. chopped candied lemon peel
1 qt. vegetable oil
Granulated sugar

Scald milk, stir in brown sugar and salt; cool to lukewarm. Measure warm water into large warm bowl; stir in yeast; stir to dissolve. Stir in the milk mixture, egg, flour, nutmeg and cinnamon. Beat vigorously until batter is elastic and falls in sheets from spoon. Stir in raisins and citrus peel; mix well. Cover and let rise in warm place until double (about 1 hour). DO NOT STIR DOWN. Fry in deep fat by spoonfuls (about 3 minutes). Drain on paper towels. Roll in granulated sugar and serve hot.
