WATERMELON RIND PICKLES 
7 to 8 lbs. rind

Soak in lime overnight. Wash with cold water. Cover with water and boil with ginger roots for 2 1/2 hours or until it is fork tender.

SYRUP:

4 1/2 lbs. sugar
1 qt. vinegar
Pickle spice tied in a bag

Boil all together and then add fruit and cook until clear. Put in jars.
