MRS. BOWKERS CARROT CAKE & ICING | |
1 1/2 c. oil (Crisco) 2 c. sugar 4 eggs 2 c. flour 2 tsp. baking soda 1/2 tsp. salt 2 tsp. cinnamon 3 c. grated carrots ICING: 1 (8 oz.) pkg. cream cheese 1 stick butter 1 c. chopped walnuts 1 box sifted powdered sugar 1 tsp. vanilla 1. Mix the oil and 2 cups sugar. 2. Add the 4 eggs and beat well. 3. Sift together the flour, baking soda, salt and cinnamon. 4. Add the grated carrots and stir with a wooden spoon. 5. Fill a large 9"x13" pan or 3 cake pans or a large bundt pan. Bake at 350 degrees for 40 minutes or 50 to 55 minutes for 9"x13" pan. ICING: Cream the cream cheese and butter and chopped nuts. Add the sifted confectioners' sugar and vanilla. (Makes plenty.) Spread on cooled cake and store in refrigerator. |
