CHICKEN DIVAN | |
My mother brought me this dish when I came home from the hospital with Renee. I have since made it for other families with new babies as well as for my own!! 1 (3 to 4 lb.) fryer chicken 1 can cream of anything soup (I use celery) 1 c. mayonnaise 2 c. shredded cheese (I use Mozzarella) 1 bag frozen broccoli 1/2 fresh lemon squeezed or 2 tbsp. lemon juice 2 cans fried onions Boil chicken until tender. Remove bone and fat, then cut chicken into chunks. (You now have some good chicken stock for soup.) Place chicken in 9 x 11 inch baking pan. (You can use a disposable aluminum pan if you give it to someone else.) Mix all other ingredients (except canned onions) together with chicken. Sprinkle fried onions over the top and bake at 350 degrees for 40 to 50 minutes or until bubbly. |
