OATMEAL DATE COOKIES 
1/4 tsp. salt
2 tsp. molasses
5 tbsp. vegetable oil
1/2 c. sugar
1 egg
2/3 c. dates, chopped
1 c. rolled oats
3/4 c. flour
1/2 c. nuts, chopped
1/2 tsp. vanilla

Mix shortening, sugar and molasses; cream until light. Add vanilla, beaten egg, and dry ingredients. Mix dates lightly. Drop mixture from spoon onto cookie sheet, leaving just a little space between cookies. Bake at 350 degrees for about 6 to 9 minutes; just until they turn a light brown but are not dark around the edges. These cookies cannot be over baked! Bake just until set!
