MARINATED VEGETABLE MEDLEY 
2/3 c. sugar
1/3 c. vinegar
1/3 c. oil
salt and pepper, to taste
1 can LeSueur green peas
1 can shoe-peg corn
1 can french-style green beans
1 red bell pepper, chopped
1 bundle green onions, chopped
3/4 c. celery, diced

Combine sugar, vinegar, oil and salt and pepper in a saucepan. Stir and heat until mixture comes to a boil. Remove from heat and set aside. Mix all vegetables together.

Pour cooled marinade mixture over them, stirring thoroughly. Serve chilled.

Note: This dish is delicious after being refrigerated overnight or for several hours. It makes a simple and colorful addition to a holiday meal.
