LEFSE 
2 c. mashed potatoes
1 tbsp. butter
1/4 c. milk
1/2 tsp. salt
1 tsp. sugar
2 c. flour

Cook potatoes in salted water. Drain and mash. Add butter and milk and beat hard. Add salt and sugar. Beat again and cool until cold. Add flour and stir well. Roll very thin and bake on pancake griddle until brown on both sides. Store in refrigerator. Butter and roll to eat. Some like to sprinkle with sugar or cinnamon and sugar. Makes 5.
