ZUCCHINI SKILLET SUPPER 
4 c. zucchini, thinly sliced
1 onion, sliced
2 c. canned tomatoes with juice
3/4 c. canned mushrooms, drained
Salt and pepper to taste
Oregano to taste
Browned ground beef, cubes of cooked chicken, beef or ham

Saute zucchini and onion in small amount of hot fat. Add remainder of ingredients, we use whichever meat we have leftover or the ground beef. Simmer just until heated through. Serve with noodles or rice.
