APPLE SAUSAGE PATTIES 
1 med. onion, finely chopped
1 1/2 lb. lean pork, well trimmed, then ground
1/2 lg. apple, finely chopped
2 egg whites
1/2 tsp. freshly ground pepper
3/4 tsp. salt
1/2 tsp. nutmeg
1/3 tsp. ginger
1/3 tsp. allspice
1/4 tsp. ground sage
Dash hot pepper sauce

Mix all ingredients thoroughly. Divide mixture in half. Wrap each half in plastic. Form into cylinders. Refrigerate overnight. Unwrap cylinders and cut sausage into slices. Shape each piece into a 1/2 inch thick patty. Heat heavy skillet or grader. Cook about 3 1/2 minutes per side.
