DIET CASSEROLE (LOW CALORIE
RECIPE)
 
1/2 lb. ground beef
1 tbsp. oil
1 med. onion, chopped
1 green pepper, chopped
28 oz. can whole, peeled tomatoes
1 clove garlic, minced
1/2 tsp. oregano
3/4 lb. zucchini, sliced
Parmesan cheese

In pan, saute ground beef in oil until lightly browned. Drain excess fat. Add onion, green pepper, tomatoes, garlic and oregano. Cook until thick. Arrange zucchini slices on bottom and sides of shallow 1 quart baking dish. Cover with meat sauce, sprinkle with cheese. Bake in preheated 375 degree oven for 25 minutes.
