DELICIOUS PANCAKES 
3 c. flour
5 tsp. baking powder
1 tsp. salt
3 tbsp. sugar
2 tbsp. melted shortening
2 1/4 c. milk (or more)
2 eggs - separate whites and whip

Combine dry ingredients (flour, baking powder, salt and sugar). Beat eggs and add oil and milk. Pour the liquid ingredients into the dry and beat or stir until smooth.

Pour the pancakes onto a hot griddle. When they start to bubble turn them and cook other side. This amount will serve four or more. The batter can be refrigerated a day or two.
