CAJUN SEAFOOD GUMBO 
8 oz. pkg. frozen okra, diced small
2 1/2 c. diced celery
2 1/2 c. diced potato
2 1/2 c. diced carrot
2 1/2 c. diced green pepper
1/2 c. chopped onion
1 1/2 tsp. cayenne pepper
1 1/2 tsp. paprika
1 tsp. salt
1/2 tsp. white pepper
1/2 tsp. black pepper
1/2 tsp. oregano
1/2 tsp. thyme
1 tsp. fresh minced garlic
1 tbsp. Tabasco
3/4 lb. butter
3 c. tomato sauce
2 sm. cans tomatoes, chopped fine
8 c. clam juice
16 oz. drained, chopped clams
1/2 lb. cooked shrimp

Melt butter in kettle, add all vegetables and seasonings. Cook 7 minutes on medium to high heat. Add tomato sauce, chopped tomatoes and their juice. Cook 5 minutes on medium heat. Add clam juice, cook on medium to high heat until vegetables are done. Add chopped clams and shrimp just before serving, cook 3 minutes on medium heat. This recipe is quite spicy, as is all Cajun food. Adjust the seasonings to suit your own taste.
