CREOLE SEAFOOD GUMBO | |
1 c. finely chopped celery 1 med. onion 1/2 c. green onion 1/2 c. bell pepper 1 (18 oz.) can tomato paste 2 (6 oz.) cans tomato sauce 1 lb. sausage 8 crabs 2 (12 oz.) pkgs. frozen okra 1 1/2 lbs. shrimp 1/3 c. cooking oil 8 c. water In a large saucepan put about 1/3 cup of cooking oil. Combine onions, celery, green onions, bell peppers and smoked sausage and let saute for about 3 minutes. Add tomato sauce and paste, crabs, okra and water. Cover. Cook over a medium heat for about 35 minutes or until okra looks done; add shrimp. Simmer 5 minutes. Cook until shrimp is done. |
