LOUISIANA SEAFOOD GUMBO 
1 c. oil
1 c. flour
2 lg. chopped onions
1 chopped bell pepper
1/2 c. chopped celery
3 pods pressed garlic
2 qt. water
Salt, pepper, cayenne
Sauteed okra; optional (2 c.)
3 bay leaves
4 cleaned, broken crabs
1 can crab meat
1 lb. peeled shrimp
1 pt. oysters, and liquid
1/2 c. parsley
3-4 sliced green onions
Gumbo file

Make a roux with oil and flour. When dark brown, add onion, bell pepper, celery, garlic to cool. Add water, stirring constantly. Add salt, pepper, cayenne, bay leaf (season well). Add can of crab meat and crabs. Cook over low heat for 1 hour. Add shrimp after 1 hour, along with parsley and green onion. After 15 minutes, add oysters and cook everything for 15 minutes longer. Serve over rice with plenty of gumbo file. Sauteed okra may be added for those whole like it.
