BANANA-PINEAPPLE OATMEAL MUFFINS | |
1 Texas size muffin pan or 1 (24 c.) miniature cupcake pan 1 cup quick-cooking oats 1 1/4 cups all-purpose flour 2 tsp. baking powder 1/2 tsp. salt 1 tsp. cinnamon 2 eggs 1/2 cup brown sugar 1 tsp. vanilla 1/4 cup buttermilk 1/4 cup oil 1 (8 oz.) can crushed pineapple, undrained 1 cup diced bananas (2-3 med.) Preheat oven to 400°F. Grease muffin pan. Combine first 5 ingredients in a large bowl. In a separate bowl, mix together eggs, sugar, vanilla, buttermilk, and oil. Pour all at once into dry ingredients and stir only until moistened. Add pineapple and bananas. Divide batter evenly into muffin cups. Bake at 400°F for 15 to 18 minutes. Cool in pan 5 minutes before removing. Yields: 24 miniature muffins (or bake at 400°F for 20 minutes for 6 Texas-size muffins). |
