BANANA-PINEAPPLE OATMEAL MUFFINS 
1 Texas size muffin pan or 1 (24 c.) miniature cupcake pan
1 cup quick-cooking oats
1 1/4 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
2 eggs
1/2 cup brown sugar
1 tsp. vanilla
1/4 cup buttermilk
1/4 cup oil
1 (8 oz.) can crushed pineapple, undrained
1 cup diced bananas (2-3 med.)

Preheat oven to 400°F. Grease muffin pan.

Combine first 5 ingredients in a large bowl.

In a separate bowl, mix together eggs, sugar, vanilla, buttermilk, and oil. Pour all at once into dry ingredients and stir only until moistened. Add pineapple and bananas. Divide batter evenly into muffin cups.

Bake at 400°F for 15 to 18 minutes. Cool in pan 5 minutes before removing.

Yields: 24 miniature muffins (or bake at 400°F for 20 minutes for 6 Texas-size muffins).

I made these and although they taste good, they fail to rise like others. The acid in the pineapple is counters the baking powder ability to rise. Pineapple acid is difficult to cook with.

I also make these muffins and they failed to rise as well but upon getting on cooled enough to eat I found them not cooked in the 20 minutes at 400°F. I have put them back in the oven to see what happens. Hope they cook through and are easier to get out of the muffin papers. I like using muffin paper rather than greasing the pans. Need to control the fat I use.

I had added a couple of spoonfuls of coconut that was hiding in my freezer and used a reg muffin tin with silicone cups. Turned out beautiful. High tops as well. Oh no buttermilk so used Ziggis yogurt. Yummy.

This is a healthy staple snack at our house for years! But it's hard to find a new mini muffin pan that is the right size; 1-inch deep; 2-inches across. Just keep on using my old one; can't stop making these!
