BOURBON SWEET POTATOES 
2 lbs. sweet potatoes, cooked & peeled
1/4 c. butter, softened
4 tsp. bourbon
4 tsp. orange juice
1 tbsp. light brown sugar
1/4 tsp. salt
1/4 tsp. apple pie spice
2 tbsp. chopped pecans

Mash potatoes in large bowl. Add butter, bourbon, orange juice, brown sugar, salt and spice. Beat until fluffy and smooth. Spoon into buttered, 3 cup baking dish. Sprinkle nuts around the edge. Bake at 350 degrees for 45 minutes until lightly browned. Serves 4. Can be doubled.
