BETTER THAN IT LOOKS BROCCOLI
SALAD
 
1 pkg. (4 serving size) sugar-free lemon jello
1/2 tsp. salt
1 c. boiling water
1 (10 oz.) pkg. chopped broccoli
2 tsp. minced onion
1/2 c. low-fat cottage cheese
2 tbsp. reduced calorie mayonnaise
2 tsp. prepared mustard

Completely dissolve gelatin and salt in boiling water. Add broccoli and onion and stir until broccoli thaws; separate. Add low fat cottage cheese, mayonnaise and mustard; pour into individual dishes or a bowl. Chill until set, at least 30 minutes. Makes 3 cups or 6 servings - 40 calories per serving.
