CASSEROLE POTATOES 
6 c. grated potatoes, raw
1/2 c. melted butter
1 c. minced onion
1/4 c. chopped fresh parsley (don't substitute dried parsley)
1 c. diced celery
2 tsp. salt
1/2 tsp. paprika

Mix everything together. Put into a well buttered 2-3 quart casserole and bake one hour in a 375 F. oven. Serves 8-10.
