SWEET POTATO PIE | |
2 reg. frozen pie shells (come 2 in a pack) 3-4 good sized yams 2 eggs 1 c. sugar 3/4 can evaporated milk 1 stick butter Dash of cinnamon Dash of nutmeg 1 1/2 tsp. lemon flavor (vanilla can be substituted if you wish) Rinse off yams and place in large enough pot to boil with water covering yams (about 2 inches above them). When yams are done, stick fork through questionable parts (partly through) if it goes in easily it's done. Roll over on other side and do the same, if there's a problem with fork test then let rough side remain on bottom side of pot a while longer then try again. When yams are done, drain and peel. Place yams in mixer, add stick of butter, slice in butter as you slice yams. Pour in milk, add all other ingredients. Blend on medium speed until all ingredients are mixed well and there are no large chunks in mix. Pour in ready frozen shells. Place in oven that's been heated to 350-375 degrees. Bake 1 hour. |
