ORANGE BAKED CHICKEN | |
12 chicken pieces 1 1/2 c. orange juice 2 tbsp. oregano leaves 1/2 tsp. garlic powder, ground sage 1/2 tsp. thyme, crushed rosemary leaves 1/4 c. orange marmalade 1 tbsp. cornstarch Salt & pepper to taste 3 c. cooked rice Preheat oven to 350 degrees. Place chicken in a 13"x9" dish, skin side down. Mix juice and seasonings, pour over chicken and sprinkle with paprika. Bake for 30 minutes. Turn chicken, sprinkle with paprika. Bake for 30 to 40 minutes or until meat is tender. Pour juices in saucepan. Skim fat. Add marmalade and cornstarch dissolved in 2 tablespoons water. Cook until sauce is clear and thickened. Serve chicken and sauce over rice. |
