SMOKY QUICHE 
1 unbaked pie shell
1 lb. bacon, cut into 1/2 inch strips
1/4 c. chopped green onion
1 c. smokey cheddar cheese, grated
6 eggs, beaten
1 c. whipping cream or sour cream
1/2 tsp. salt
Dash of Tabasco sauce
1/8 tsp. nutmeg

Prick bottom and sides of pie shell, bake at 450 degrees for 6 minutes. Saute bacon and onion in skillet until brown. Drain well. Sprinkle evenly in pie shell. Sprinkle on a layer of cheese. Set aside. Combine eggs, cream, salt, pepper, nutmeg, mixing well. Pour over cheese layer. Bake at 350 degrees for 50 minutes.
