HONEY OATMEAL CHEWS 
1/2 c. butter
1/2 c. honey
1/2 c. sugar
1 egg
1 tsp. vanilla
2/3 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1 c. quick-cooking rolled oats
1 c. flaked coconut
1/2 c. chopped nuts

Cream butter, honey and sugar until light and fluffy. Add egg and vanilla; beat well. Add flour, soda, baking powder, salt to creamed mixture. Stir in oatmeal, coconut, nuts. Spread in greased 13 1/2 x 9 inch baking pan. Bake in 350 degree oven for 20-25 minutes. When cool, cut into bars, about 1 1/2 x 2 1/2 inches. Makes 30 bars. No frosting necessary, but a sprinkle of powdered sugar is nice.
