NEW COVENANT CHICKEN CASSEROLE
WITH WILD RICE
 
2 leg quarters
2 chicken breasts
1 pkg. UNCLE BEN'S® long grain wild rice with seasoning
1 can broccoli soup
1 (10 oz.) pkg. frozen French cut green beans
1 can water chestnuts, sliced
4 heaping tbsp. mayonnaise
Cheddar cheese

Boil chicken in salted water. Cool chicken, debone, cut into bite-size pieces. Stock will not be used in this recipe. Make recipe of UNCLE BEN'S® long grain, wild rice. Add chicken, cream of broccoli soup, green beans, water chestnuts, mayonnaise. Mix well. Cover with Cheddar cheese. Bake at 300 degrees uncovered until hot. Serve with salad and garlic bread or rolls.

Freezes well. We have used this recipe many times for diner to feed up to 600 people by increasing quantities. Chicken may be cooked in advance and frozen to use in later recipe preparation for ease in feeding large crowds.
