PERSIMMON COOKIES 
1 c. persimmon pulp
1 tsp. baking soda
1 c. sugar
1/2 c. butter
1 egg, beaten
2 c. flour
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. chopped nuts
1 c. raisins, soak in hot water 5 min.

Cream together persimmon pulp, baking soda, sugar, butter and egg. Then add flour, cinnamon, cloves, nutmeg, salt, chopped nuts and raisins. Mix thoroughly. Bake at 375 degrees for 12-15 minutes. Makes 3 dozen.

Doubling this recipe works fine.
