1 c. persimmon pulp 1 c. sugar 1/2 c. butter 1 egg 2 c. flour 1 c. raisins or nuts (walnuts are best) 1 tsp. baking soda 1/2 tsp. cinnamon 1/2 tsp. cloves 1/2 tsp. nutmeg 1 tsp. baking powder Mix soda in the cup of persimmon pulp and set aside. Cream butter and sugar. Beat in egg then add persimmon pulp. Sift dry ingredients together and add raisins or nuts. Bake at 350 degrees for 8 to 10 minutes. To vary recipe, omit cloves and add 1 teaspoon lemon extract and grated rind from 2 lemons. |
