CHICKEN 'N DUMPLINGS | |
1 cleaned broiler/fryer chicken (about 3 lbs.) 1 qt. boiling water 1/2 tsp. Mrs. Dash seasoning 1 sprig parsley 1/4 tsp. garlic powder (or few drops pressed garlic) 1 piece lemon 1 (6 oz.) pkg. prepared biscuits Salt and pepper to taste 1 can chicken broth Wash and cut chicken into serving pieces. Place in kettle and add boiling water, Mrs. Dash, parsley, garlic and lemon. Bring to a boil and simmer over low heat until tender (about 1 hour). Remove chicken; cool and strip meat from bones. Cut into bite-size pieces. Cool chicken stock. Strain stock and refrigerate until fat congeals on top. Lift off fat and discard. Add chicken broth (can), chicken pieces and reheat. Add biscuits to top; cover and cook 15-20 minutes or until dough puffs. Taste and add seasonings to your taste. |
