PHOENIX QUICHE 
1 1/2 c. grated Jack cheese
1 c. mild Cheddar, grated
4 oz. can diced green chilies
1 c. half & half
1/4 tsp. salt
1/8 tsp. cumin
3 eggs, beaten
1 (9-inch) pie shell, half baked

Place Jack cheese and 1/2 cup Cheddar cheese in pie shell evenly. Sprinkle green chilies over this. Beat eggs with cream and seasonings. Pour into pie shell. Sprinkle remaining Cheddar cheese over this. Bake at 325 degrees for 40 minutes or until pie is firm. Serves 6.
