CHICKEN SALAD 
4 slices bacon
1/2 c. canned water chestnuts
2 1/2 c. cooked chicken
2 tbsp. chopped pimento
2 tbsp. chopped parsley
2 tsp. minced onion
1 tsp. lemon juice
1 tsp. salt
1/4 tsp. powdered ginger
1/8 tsp. pepper
Few drops of Worcestershire sauce
1/2 c. mayonnaise

Cook bacon till crisp. Drain on paper towel and crumble. Cut water chestnuts into thin slices. Dice chicken. Mix together the chicken, water chestnuts, bacon, pimento, parsley and onion. Add the lemon juice, salt, ginger, pepper and Worcestershire sauce to mayonnaise and mix. Add the chicken mixture and mix lightly but thoroughly. Makes approximately 3 1/2 cups.
