MEL'S LAMB SHISH KEBAB 
MARINADE:

1 tsp. garlic, finely chopped
2 tsp. fresh ginger, finely chopped
2 tbsp. lemon juice
1/4 cup peanut (or vegetable) oil
1/2 tsp. ground turmeric
1/2 tsp. ground coriander
1/2 tsp. ground cumin
1/8 tsp. cayenne
1 tbsp. grated onion

KEBABS:

2 lb. lean lamb, cut into cubes
2 medium onions, cut into chunks
2 green peppers, cut into chunks
2 tomatoes, cut into chunks

Mix all of the marinade ingredients in a large bowl. Add the lamb cubes and marinate for 1 hour or preferably overnight in refrigerator.

Preheat the broiler or light the barbecue.

Divide the meat and vegetables evenly into 4 parts, and skewer the pieces on 4 skewers.

Place 4 to 5 inches from the flame, grill, turning to cook evenly, for approximately 10 minutes.
