CARROT-PECAN CAKE 
Mix 1 1/4 cup oil and 2 cups sugar. In separate bowl mix 2 cups flour, 2 teaspoons baking powder, 2 teaspoons cinnamon, 1 teaspoon baking soda, 1/2 teaspoon salt. Combine above 2 mixtures. Then add 4 eggs, one at a time. Add 3 cups carrots, 1 cup pecans. Grease and flour pan (angel food pan). Bake at 325 degrees for 1 hour and 10 minutes or until done.

ICING:

1 box confectioners' sugar
8 oz. Philadelphia cream cheese
1/2 stick butter
1 tsp. vanilla

Beat all together and spread on cooled cake.
