WHITE CHILI 
1 lb. white beans
6 c. chicken broth
2 cloves garlic, minced
2 med. onions, chopped
2 tbsp. oil
2 (4 oz.) cans green chilies
2 tsp. ground cumin
1 tbsp. oregano
1/4 tsp. cloves
1/2 tsp. cayenne pepper
4 c. chopped, cooked chicken
3 c. grated Jack cheese

Soak beans overnight, drain. Add chicken broth, garlic and 1/2 onions. Bring to a boil, simmer until tender. Saute remaining onions in oil until soft, add chilies, seasonings and mix well. Add to beans with chicken and simmer 1 hour longer. Serve with grated cheese. Ground chicken or turkey can be used. Brown first.
